Chicken
soup is one of the foods favored by the people of Indonesia, one of then Bugis
society. types of chicken soup variety is very diverse and almost all the
people of Indonesia can make it. Chicken soup is usually served when there is a
party and to make it quite easy. As for the materials needed is ¼ kg chiken meat, 1 pack sohum (boil for 2
minutes than drain), 250 grams of bean sprouts that has been boiled, 3 cm
galangal, 2 bay leaves, 2 stalks of lemongrass,3 pieces of ginger leaves, salt,
and papper powder, 1 orange juice, oil, shredded onion for sprinkling and 5
cups of water. After the main ingredients are ready then for ground spices, we
prepare 4 onion, 5 leaves of garlic, 2 cm ginger, 2 cm turmeric, and 2
candlenuts.
The
ingredients and the ground spices are ready for us to go to make chicken soup,
the first process is boil chicken meat with water with galangal, bay leaves,
and lemongrass until about 15 minutes. After the meat is cooked remove and
drain. After that, fry the chicken in hot oil then cut into small pieces of
chicken that has been fried earlier, while chicken stew water used as broth.
Next, heat the oil saute the seasored spices until fragrant and ripe, lift and
drain. Next, cook the broth with chicken meat that has been cut into small
pieces and seasoning that have been pan fried,add salt, sugar and papper powder
to taste then stir and cook until cooked. After that, prepare a serving bowl,
place sohum and bean sprouts and then sprinkle with gravy with chicken meat.
Finally, sprinkle fried onions and juice of orange juice.
